
A lightly sweet and crunchy tuna salad served in whole-wheat pita pockets over fresh greens. |
Ingredients
- Two (6-ounce) cans water packed tuna, strained
- 1 tablespoons red onion, chopped
- 1 medium apple, cored and chopped
- ¼ cup celery, chopped
- ¼ cup golden raisins
- 3 tablespoons fat-free or low-fat Italian dressing, divided
- 2 cups salad greens
- 2 medium whole-wheat pita pockets
Instructions
- Stir tuna, onion, apple, celery, raisins, and 2 tablespoons of dressing together in a medium bowl.
- In another bowl, toss salad greens with remaining 1 tablespoon dressing.
- Cut pitas in half to make 4 pita pockets.
- Carefully fill pita pockets with equal amounts of tuna mixture and salad greens. Enjoy!
Notes
Prep Tip:
- Prepare apples just before mixing to keep them from browning.
Regular raisins can be used in place of golden raisins, or you can skip them.
- Salad greens like dark red or green leaf lettuce provide vitamins, minerals and fiber. Try them rather than lighter colored lettuce like iceberg.
