Super Veggie Wrap

Ingredients
  

  • 1 large cucumber, peeled and thinly sliced
  • 2 small zucchini, thinly sliced
  • 2 medium carrots, peeled and thinly sliced
  • 4 large mushrooms, sliced
  • 4 green onions, chopped
  • 1 clove garlic, minced (optional)
  • Four 10-inch whole-wheat flour tortillas
  • ½ cup low-fat cream cheese

Instructions
 

  • Combine all vegetables in a small bowl.
  • Thinly spread equal parts cream cheese on each tortilla. Place equal parts chopped vegetable mixture evenly across the center of each tortilla.
  • Roll up tortilla, trapping ingredients tightly inside to form a tight tube. When finished rolling, slice each tube into 1-inch wide sections to serve.

Notes

Change it Up
  • Try adding 1 tablespoon of salsa to each wrap.
