
Creamy deli chicken salad with grapes and apples. |
Ingredients
- Two (12.5-ounce) cans chicken, drained, or 3 cups diced cooked chicken
- 1 cup red or green seedless grapes, quartered lengthwise
- 1 green onion, chopped or 2 teaspoons onion, minced
- 1 medium apple (about 1 cup), finely chopped
- 1 stalk celery, finely chopped (optional)
- ¾ cup nonfat or low-fat mayonnaise
- Pepper, to taste
Instructions
- Place the chicken, grapes, green onion, celery, apple, mayo, and pepper in a large bowl. Mix well.
- Serve on lettuce, rolls, bread, crackers, or tortillas.
Notes
Change it Up
Use drained canned pineapple tidbits in place of apples. If using pineapple rings or chunks, drain and cut them into smaller pieces.
