Apple Peanut Salad

A sweet and savory salad with crunchy apples, celery, and peanuts in a creamy yogurt dressing.

Ingredients
  

  • 1 cup plain nonfat yogurt
  • 1 ½ tablespoons sugar or honey*
  • 2 large or 4 medium apples, any kind, cored and chopped
  • One (11-ounce) can mandarin oranges, drained
  • 2 celery ribs, chopped
  • ½ cup dry roasted peanuts, chopped, optional

Instructions
 

  • Combine the yogurt and sugar or honey in a serving bowl.
  • Add the apples, mandarin oranges, celery, and peanuts, if using. Mix gently.
  • Serve immediately or cover and refrigerate for up to two days.

Notes

*Avoid giving honey to infants under 1 year of age.
Change it Up
  • Use any flavored nonfat yogurt instead of plain. Omit sugar.
  • Add raisins, chopped dates, or dried cranberries.
  • Omit sugar. Add 1 pound cooked chicken, chopped, and 3 teaspoons dried dill. Serve as a sandwich or wrap.
