Cucumber Feta Salad

A fresh tossed salad with cucumbers, avocado, shallots, feta cheese, and herbs in a light vinaigrette.

Ingredients
  

  • 8 mini cucumbers, diced
  • 1 avocado, diced
  • 1 shallot, chopped
  • cup fresh dill, chopped
  • ¾ cups feta, crumbled
  • cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 ½ tablespoons lemon juice
  • 3 cloves garlic, minced

Instructions
 

  • Add cucumbers, avocado, shallot, dill, and feta to a medium-size bowl.
  • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, and garlic.
  • Pour dressing over veggies and toss gently.
  • Serve immediately or chill in refrigerator until ready to serve.
