Ingredients
- 8 mini cucumbers, diced
- 1 avocado, diced
- 1 shallot, chopped
- ⅓ cup fresh dill, chopped
- ¾ cups feta, crumbled
- ⅓ cup olive oil
- 3 tablespoons red wine vinegar
- 1 ½ tablespoons lemon juice
- 3 cloves garlic, minced
Instructions
- Add cucumbers, avocado, shallot, dill, and feta to a medium-size bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, and garlic.
- Pour dressing over veggies and toss gently.
- Serve immediately or chill in refrigerator until ready to serve.
