Ingredients

Makes 4 servings. Check items off as you go.
  • 4 whole-grain frozen waffles
  • 1½ cups water
  • 3 tablespoons sugar
  • 3 tablespoons brown sugar
  • 4 tablespoons cornstarch
  • ½ teaspoon vanilla extract
  • 4 medium fresh peached (or 4 cups canned peaches in 100% juice)
  • ½ teaspoon cinnamon or dash of nutmeg (optional)

Directions

  1. In a large sauce pan, combine water, cornstarch, brown sugar, and white sugar.
  2. Bring mixture to a boil while stirring and boil until the mixture thickens (about 30–60 seconds). Remove from the heat.
  3. Whisk in the vanilla and nutmeg or cinnamon.
  4. Fold in diced peaches until peaches are well coated and combined with mixture.
  5. Toast waffles in the toaster and serve peach sauce warm over waffles.
