Creole Green Beans

Tender green beans sauteed with ripe tomatoes, garlic, bell pepper, and a hint of cayenne.

Ingredients
  

  • 2 teaspoons vegetable oil
  • 2 small cloves garlic, chopped
  • One (16-ounce) package cut green beans, frozen (or fresh)
  • 1 cup red bell pepper, chopped
  • 1 cup tomatoes, chopped
  • ½ cup celery, chopped
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper

Instructions
 

  • Heat oil in large skillet over low heat.
  • Sauté garlic in oil for 1 minute.
  • Add green beans and bell peppers; increase heat to medium and cook for 5 to 7 minutes.
  • Stir in remaining ingredients and cook for another 5 to 7 minutes. Serve hot.

Notes

Prep Tip
If using fresh, wash green beans and snap off (or cut) both ends before cooking.

Keep washed, cut green beans in the fridge for a quick, healthy snack.
