Olympic Oatmeal

Hearty rolled oats with brown sugar, apple, raisins, and nuts.

Ingredients
  

  • 1 cup skim or ½% milk
  • ¼ cup 100% apple juice
  • 1 medium apple, cored and diced
  • cup rolled oats
  • 2 tablespoons raisins or dried cherries
  • 2 tablespoons chopped walnuts, peanuts, or pecans (optional)
  • ½ teaspoon cinnamon
  • 1 tablespoon brown sugar

Instructions
 

  • Add milk, juice, and chopped apple to a medium saucepan. Let stand for 5 minutes.
  • Heat the mixture on medium high until it starts to boil.
  • Stir in oatmeal, cinnamon, dried fruit, and brown sugar.
  • Return to low boil, reduce heat and simmer for 5 minutes, stirring occasionally.
  • Remove from heat and sprinkle with nuts before serving.
