Ingredients

Makes 4 servings. Check items off as you go.
  • 6 ounces soba (buckwheat) noodles uncooked
  • 2 teaspoons sesame or canola oil
  • One 1-pound pork tenderloin trimmed and cut into 2-inch strips
  • 1 tablespoon chili-garlic sauce
  • 1 teaspoon fresh ginger grated
  • 1 small red bell pepper cut into strips
  • ¼ cup reduced-sodium chicken broth
  • 1 ½ tablespoons low-sodium soy sauce
  • 1 tablespoon peanut butter
  • 4 green onions cut into 2-inch pieces

Directions

  1. Cook noodles according to package directions.
  2. Drain and rinse noodles with cold water.
  3. In a large skillet, heat oil over medium-high heat.
  4. Add pork, chili garlic sauce, and ginger to pan. Stir-fry for 2 minutes.
  5. Add bell pepper strips to pan and stir-fry another 2 minutes.
  6. Add broth, soy sauce, and peanut butter to pan.
  7. Reduce heat to low and cook for 1 minute or until sauce becomes slightly thick.
  8. Stir in green onions. Serve over noodles.
