Szechuan Pork

Stir-fried pork, red peppers, and green onions in a spicy peanut sauce.

Ingredients
  

  • 6 ounces soba (buckwheat) noodles, uncooked
  • 2 teaspoons sesame or canola oil
  • One 1-pound pork tenderloin, trimmed and cut into 2-inch strips
  • 1 tablespoon chili-garlic sauce
  • 1 teaspoon fresh ginger, grated
  • 1 small red bell pepper, cut into strips
  • ¼ cup reduced-sodium chicken broth
  • 1 ½ tablespoons low-sodium soy sauce
  • 1 tablespoon peanut butter
  • 4 green onions, cut into 2-inch pieces

Instructions
 

  • Cook noodles according to package directions.
  • Drain and rinse noodles with cold water.
  • In a large skillet, heat oil over medium-high heat.
  • Add pork, chili garlic sauce, and ginger to pan. Stir-fry for 2 minutes.
  • Add bell pepper strips to pan and stir-fry another 2 minutes.
  • Add broth, soy sauce, and peanut butter to pan.
  • Reduce heat to low and cook for 1 minute or until sauce becomes slightly thick.
  • Stir in green onions. Serve over noodles.
