Ingredients
- 4 large tomatoes or 30 grape or cherry tomatoes, sliced
- ¼ teaspoon kosher salt,
- ¼ teaspoon pepper
- 4 cloves fresh garlic, minced
- ¼ cup olive oil
- 10-15 basil leaves, torn
- 12 ounces whole-grain pasta
- ¼ cup Parmesan cheese, grated, optional
Instructions
- Add tomatoes, salt, pepper, garlic, olive oil, and basil in a large bowl. Mix to combine and set aside.
- Cook pasta according to package directions and drain.
- Add pasta to bowl with tomatoes. Mix gently.
- Garnish with basil and Parmesan cheese, if using. Serve.
Notes
Change it Up
- Add cooked chicken or cannellini or white beans to make this a main course.
- Up the veggie count by adding mushrooms, summer squash, or spinach.
- Add some extra flavor with a sprinkle of chili flakes before serving.
