Cinnamon Applesauce Cake

Ingredients

Makes 12 servings. Check items off as you go.
  • Cooking spray
  • ½ cup (1 stick) butter, softened
  • ⅓ cup white sugar
  • ⅓ cup dark brown sugar
  • 2 cups unsweetened applesauce
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 cup white whole-wheat flour
  • 1 tablespoon cocoa powder
  • 1½ teaspoons baking soda
  • ½ teaspoon kosher salt
  • 2 teaspoons apple pie spice

Directions

  1. Heat oven to 350 F.
  2. Spray a 9-by-9-inch baking pan with cooking spray.
  3. Use a hand mixer or large spoon to combine softened butter, white sugar, and brown sugar in a large bowl. Mix until smooth and creamy.
  4. Add applesauce and eggs. Mix until well combined.
  5. In a separate bowl, stir together the two types of flour, coca powder, baking soda, salt, and apple pie spice.
  6. Slowly add flour mixture to the butter mixture. Mix on low until just combined. Do not overmix.
  7. Pour batter into the prepped pan. Spread batter out evenly.
  8. Bake for 30-40 minutes. The cake is done when a toothpick poked into the center comes out clean.
  9. Let the cake cool before serving.
