Spray a 9-by-9-inch baking pan with cooking spray.
Use a hand mixer or large spoon to combine softened butter, white sugar, and brown sugar in a large bowl. Mix until smooth and creamy.
Add applesauce and eggs. Mix until well combined.
In a separate bowl, stir together the two types of flour, coca powder, baking soda, salt, and apple pie spice.
Slowly add flour mixture to the butter mixture. Mix on low until just combined. Do not overmix.
Pour batter into the prepped pan. Spread batter out evenly.
Bake for 30-40 minutes. The cake is done when a toothpick poked into the center comes out clean.
Let the cake cool before serving.

Prep Tip
You can also make this cake using a 9-by-13-inch pan or 8-by-8-inch pan. You will need to adjust the baking time accordingly; less time if using a larger pan and more time if using a smaller pan.
Change it Up!
2 cups of all-purpose flour or 1 cup all-purpose flour and 1 cup of regular whole wheat flour can be used in place of white whole-wheat flour.
To make this cake gluten-free, use cup-for-cup gluten-free baking flour.
Apple pie spice can be made by combining 1 teaspoon cinnamon, ½ teaspoon nutmeg, and ½ teaspoon ground ginger, or substituted with 2 teaspoons cinnamon.
Stick margarine or vegan butter can be substituted for dairy butter. Do not use oil.
Swap light brown sugar for dark brown sugar.
