Ingredients
  

  • 2-3 cucumbers, sliced into rounds
  • 36 round rice crackers
  • 4 ounces hummus

Instructions
 

  • Spread a thin layer of hummus on crackers.
  • Arrange in this order: cucumber, cracker with hummus then cucumber. Repeat as many times as desired.

  • All vegetables are good for you. You could also use zucchini or yellow summer squash instead of, or in addition to, cucumbers in this recipe.
Prep Tip
  • Don’t cut the cucumbers too thick or the stacks will fall over.
