Instructions
Spread a thin layer of hummus on crackers.
Arrange in this order: cucumber, cracker with hummus then cucumber. Repeat as many times as desired.

All vegetables are good for you. You could also use zucchini or yellow summer squash instead of, or in addition to, cucumbers in this recipe.
Prep Tip
Don’t cut the cucumbers too thick or the stacks will fall over.
