An easy one-pot meal featuring ground turkey, zucchini, and spices. |
Ingredients
- Cooking spray
- 1 medium onion, chopped
- 1 pound lean ground turkey
- Two (14.5-ounce) cans reduced or low-sodium, or no salt added diced tomatoes
- 2 teaspoons Italian seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon pepper
- 2 to 3 medium zucchini, sliced
Instructions
- Spray large frying pan with cooking spray and bring to medium heat.
- Add onions and sauté for 3 minutes or until translucent.
- Add ground turkey and cook until meat is no longer pink, about 10 minutes.
- Add canned tomatoes with juice, Italian seasoning, garlic powder, and pepper and simmer over medium heat, about 10 minutes.
- Add zucchini and cook 3 minutes or until tender.
- Taste and adjust seasoning as needed. Serve.
Notes
Change it Up
- Replace turkey with lean ground beef, chicken, cooked lentils, or white beans.
- Use turmeric instead of Italian seasoning.
- Add diced bell peppers to Step 2 and corn to Step 5.
