Zesty Chicken Salad

An entrée salad with tender chicken and fresh colorful veggies. Use store-bought rotisserie chicken for a dinner that is ready in less than 30 minutes.

Ingredients
  

  • 3 boneless, skinless chicken breasts, cooked and chilled
  • 3 green onions, sliced
  • 1 ½ cups small broccoli florets
  • 2 medium carrots, peeled and cut into strips
  • 1 red bell pepper, cut into strips
  • 2 cups cabbage, shredded
  • ½ cup fat-free Asian or sesame seed salad dressing
  • ¼ cup 100% orange juice
  • ¼ cup cilantro, chopped (optional)

Instructions
 

  • Cut chicken breasts into small strips.
  • Add chicken, onions, broccoli, carrots, bell peppers, and cabbage in a medium bowl.
  • Stir together dressing and juice in a small bowl. Pour mixture over salad and toss well to coat.
  • Stir in cilantro, if using. Serve chilled or at room temperature.

  • Don’t have cilantro available? Try different fresh herbs you have on hand, such as parsley or basil.
