Ingredients
  

  • 6 cups fresh arugula
  • 4 cups seedless watermelon, cut into bite-sized pieces
  • 4 ounces crumbled goat cheese
  • ⅓ cup chopped almonds or pistachios
  • 2-3 tablespoons balsamic glaze (not vinegar)

Instructions
 

  • Place arugula in a large bowl or arrange on a serving plate.
  • Add watermelon, goat cheese, and nuts.
  • Drizzle balsamic glaze over salad.

Notes

Change it Up!
  • Use a different leafy green like spring mix, chopped Romaine lettuce, or baby spinach. 
  • Swap feta, mozzarella, or burrata cheese for goat cheese.

  • Add 1 tablespoon of thinly chopped fresh mint leaves.
