sliced

yellow squash,
sliced

cherry tomatoes,
or 1 small tomato, quartered

mushrooms,
cremini or baby bella

low-fat vegetable dip
Instructions
Place zucchini, squash, tomatoes, and mushrooms on each skewer, alternating vegetables by color.
Arrange skewers on platter and drizzle with vegetable dip. Serve.
Notes
Change it Up
Grill the kabobs and serve hot or cold. If grilling, soak wood skewers in water before grilling and add onions and green peppers.
Add to
scrambled eggs, chicken enchiladas, burritos, or quesadillas.
