Equipment
- 4 wooden or metal skewers
Ingredients
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 2 cherry tomatoes, or 1 small tomato, quartered
- 4 mushrooms, cremini or baby bella
- ½ cup low-fat vegetable dip
Instructions
- Place zucchini, squash, tomatoes, and mushrooms on each skewer, alternating vegetables by color.
- Arrange skewers on platter and drizzle with vegetable dip. Serve.

Change it Up
- Grill the kabobs and serve hot or cold. If grilling, soak wood skewers in water before grilling and add onions and green peppers.
