Vegetable Kabobs and Dip

Equipment

  • 4 wooden or metal skewers

Ingredients
  

  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 2 cherry tomatoes, or 1 small tomato, quartered
  • 4 mushrooms, cremini or baby bella
  • ½ cup low-fat vegetable dip

Instructions
 

  • Place zucchini, squash, tomatoes, and mushrooms on each skewer, alternating vegetables by color.
  • Arrange skewers on platter and drizzle with vegetable dip. Serve.

Notes

Change it Up
  • Grill the kabobs and serve hot or cold. If grilling, soak wood skewers in water before grilling and add onions and green peppers.
  • Add to scrambled eggs, chicken enchiladas, burritos, or quesadillas.
