Instructions
Place potatoes in a large pot and cover with water. Bring to a boil.
Reduce heat to medium and cook uncovered for 15-20 minutes, or until tender.
Drain and place potatoes in a bowl.
Mash the potatoes.
Stir in parsley, oil, salt, and pepper. Serve hot.
