Smashed Red Potatoes

Classic mashed potatoes made with skin-on red potatoes and fresh herbs.

Ingredients
  

  • 2 pounds red potatoes, scrubbed and cut into small wedges
  • ¼ cup fresh parsley, minced
  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Place potatoes in a large pot and cover with water. Bring to a boil.
  • Reduce heat to medium and cook uncovered for 15-20 minutes, or until tender.
  • Drain and place potatoes in a bowl.
  • Mash the potatoes.
  • Stir in parsley, oil, salt, and pepper. Serve hot.
