Add sliced apples, lemon juice, brown sugar, cinnamon, cloves, vanilla, salt, and cornstarch to slow cooker. Stir until apple slices are evenly coated.
Place divided butter on top of apple slices. Pour water into the sides of slow cooker so it reaches the bottom and does not rinse apples.
Place lid on slow cooker and cook on high heat for 2 hours.
Remove lid and stir apples well. Replace lid and continue cooking for an additional hour. Serve hot.
