sweet potatoes,
peeled and cubed

cumin

teaspoon
kosher salt

red pepper flakes,

fresh herbs,
rosemary, chives, or sage, chopped, optional
Instructions
Heat oil over medium-high heat in large frying pan.
Sauté bell peppers and onions until tender, about 5 minutes.
Add sweet potatoes, cumin, salt, and red pepper flakes, if using, reduce heat to medium.
Sauté for 20-25 minutes, stir occasionally to brown all sides of the sweet potatoes.
Garnish with fresh herbs, if using. Serve.
Notes
Change it Up
Use 2 cups of frozen bell pepper and onion
in place of fresh.
Add paprika and garlic powder for extra
flavor in Step 3.
Add 1 pound of cooked lean ground turkey
with a little fresh sage to make it a meal.
Make breakfast burritos. Add black beans,
scrambled eggs, and shredded cheese. Roll up in flour tortillas.
