Ingredients
- ¼ cup vegetable oil
- 1 bell pepper, chopped
- 1 medium onion, diced
- 2 pounds sweet potatoes, peeled and cubed
- 1 teaspoon cumin
- ½ teaspoon kosher salt
- ½ teaspoon red pepper flakes, optional
- 2 tablespoons fresh herbs, rosemary, chives, or sage, chopped, optional
Instructions
- Heat oil over medium-high heat in large frying pan.
- Sauté bell peppers and onions until tender, about 5 minutes.
- Add sweet potatoes, cumin, salt, and red pepper flakes, if using, reduce heat to medium.
- Sauté for 20-25 minutes, stir occasionally to brown all sides of the sweet potatoes.
- Garnish with fresh herbs, if using. Serve.
Notes
Change it Up
- Use 2 cups of frozen bell pepper and onion
in place of fresh. - Add paprika and garlic powder for extra
flavor in Step 3. - Add 1 pound of cooked lean ground turkey
with a little fresh sage to make it a meal. - Make breakfast burritos. Add black beans,
scrambled eggs, and shredded cheese. Roll up in flour tortillas.
