Savory Sweet Potato Hash

A medley of sweet potatoes, onion, and peppers, with smoky cumin and fresh herbs.

Ingredients
  

  • ¼ cup vegetable oil
  • 1 bell pepper, chopped
  • 1 medium onion, diced
  • 2 pounds sweet potatoes, peeled and cubed
  • 1 teaspoon cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon red pepper flakes, optional
  • 2 tablespoons fresh herbs, rosemary, chives, or sage, chopped, optional

Instructions
 

  • Heat oil over medium-high heat in large frying pan.
  • Sauté bell peppers and onions until tender, about 5 minutes.
  • Add sweet potatoes, cumin, salt, and red pepper flakes, if using, reduce heat to medium.
  • Sauté for 20-25 minutes, stir occasionally to brown all sides of the sweet potatoes.
  • Garnish with fresh herbs, if using. Serve.

Notes

Change it Up
  • Use 2 cups of frozen bell pepper and onion
    in place of fresh.
  • Add paprika and garlic powder for extra
    flavor in Step 3.
  • Add 1 pound of cooked lean ground turkey
    with a little fresh sage to make it a meal.
  • Make breakfast burritos. Add black beans,
    scrambled eggs, and shredded cheese. Roll up in flour tortillas.
