Instructions
Place peeled banana, beets, oats, baking powder, egg, and water in a blender and pulse until smooth.
Preheat frying pan on medium heat and and lightly coat with cooking spray (or a bit of butter or oil).
When hot, drop 2 tablespoons of batter into the pan to form small circles (or use heart shaped molds).
Once bubbles begin to form, flip pancakes and cook for about 2 minutes.
Top with sliced fruit and serve immediately.
Optional: Greek yogurt, nut butter, or a sprinkle of powdered sugar.
