Pink Pancakes

Ingredients
  

  • Nonstick vegetable cooking spray
  • 1 banana, peeled
  • ¼ cup cooked beets, canned or roasted
  • 1 cup old-fashioned oats
  • ½ teaspoon baking powder
  • 1 egg
  • 1 teaspoon water
  • Strawberries, sliced
  • Banana, sliced

Instructions
 

  • Place ingredients in a blender and pulse until smooth.
  • Preheat frying pan on medium heat and and lightly coat with cooking spray (or a bit of butter or oil).
  • When hot, drop 2 tablespoons of batter into the pan to form small circles (or use heart shaped molds).
  • Once bubbles begin to form, flip pancakes and cook for about 2 minutes.
  • Top with sliced fruit and serve immediately.
  • Optional: Top with low-fat Greek yogurt, nut butter, or sprinkle a little powdered sugar on top.
