rinsed and scrubbed

olive oil

rosemary or thyme,
leaves removed from stem

kosher salt
Instructions
Preheat oven to 450 F.
Cut potatoes into quarters or smaller.
Mix potatoes with oil, salt, and herbs in a baking dish.
Bake for 30 to 40 minutes or until potatoes are easily pierced by a fork. Serve warm.
Notes
Change it Up
Use different seasonings like fresh or dried turmeric, dill, or lemon pepper.
Make with
different types of potatoes like
red and blue.
If using fingerling or baby potatoes, reduce cook time
by about 10 minutes.
