curry powder

Instructions
Add carrots, apple and onions to a medium bowl. Mix gently.
Whisk together oil, curry powder, salt, pepper, and lemon juice in a small bowl. Let marinate 5 minutes.
Pour dressing over carrot mixture. Stir in raisins (optional). Mix until well coated. Serve immediately or chill before serving.
Notes
Change it Up
Skip the apple and add jicama instead, or make the dish with just carrots.
