Curry Carrot Salad

A mix of fresh carrots, apple, onion, and raisins in a citrus spiced curry dressing.

Ingredients
  

  • 4 medium carrots, peeled and grated
  • 1 medium apple, chopped
  • ½ small onion, diced
  • 2 tablespoons lemon juice
  • 3 tablespoons canola or vegetable oil
  • ½ teaspoon curry powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup raisins, optional

Instructions
 

  • Add carrots, apple and onions to a medium bowl. Mix gently.
  • Whisk together oil, curry powder, salt, pepper, and lemon juice in a small bowl. Let marinate 5 minutes.
  • Pour dressing over carrot mixture. Stir in raisins (optional). Mix until well coated. Serve immediately or chill before serving.

Notes

Change it Up
  • Skip the apple and add jicama instead, or make the dish with just carrots.
