cut into six 6-inch-long matchsticks

whole-grain bread

(3ounces) low-fat or fat-free cream cheese,
or hummus
Instructions
Flatten bread slices with a rolling pin.
Spread cream cheese or hummus on flattened slices of bread.
Lay two carrot and two cucumber matchsticks on one end of each slice.
Roll up each slice of bread, pressing gently to seal, then cut each roll into four equal pieces.
