scrubbed clean

brown sugar,
packed

flour,
sifted

salt

ground cinnamon

ground nutmeg

teaspoon
orange peel,
grated (or zest)

teaspoons
reduced calorie soft tub margarine

orange juice
Instructions
Preheat oven to 350 F.
Cut sweet potatoes in half. Boil until tender but firm, about 20 minutes.
When cool enough to handle, peel and cut into ¼-inch thick slices.
Combine sugar, flour, salt, cinnamon, nutmeg, and orange peel.
Place half of the sweet potatoes in a medium-sized casserole dish. Sprinkle with spiced sugar mixture.
Dot with half of the amount of margarine.
Add a second layer of sweet potatoes, and the rest of the ingredients in the same order as before.
Add orange juice.
Bake uncovered for 20 minutes.
