Sort beans and remove any shriveled peas, stones or debris. Rinse peas and pour into a large bowl. Fill with enough water to cover peas. Let soak overnight.
Drain water and transfer peas to large pot. Add water, turkey ham, onions, pepper, all-purpose seasoning, garlic, green pepper, beef bouillon, and salt substitute.
Simmer peas on low heat until tender, about 45 minutes.
