
Creamy southern-style black-eyed peas simmered with smoked turkey and spices. |
Ingredients
- 1 pound dried black-eyed peas
- 6 cups water
- 1 cup low-sodium smoked turkey ham, diced
- 1 cup onion chopped
- ½ teaspoon pepper
- 1 teaspoon sodium-free all-purpose seasoning
- 1 tablespoon garlic, minced
- ¼ cup green pepper, chopped
- 2 cubes no-sodium beef bouillon
- 1 teaspoon salt substitute
Instructions
- Sort beans and remove any shriveled peas, stones or debris. Rinse peas and pour into a large bowl. Fill with enough water to cover peas. Let soak overnight.
- Drain water and transfer peas to large pot. Add water, turkey ham, onions, pepper, all-purpose seasoning, garlic, green pepper, beef bouillon, and salt substitute.
- Simmer peas on low heat until tender, about 45 minutes.
