Ingredients
  

  • 1 pound dried black-eyed peas
  • 6 cups water
  • 1 cup low-sodium smoked turkey ham, diced
  • 1 cup onion chopped
  • ½ teaspoon pepper
  • 1 teaspoon sodium-free all-purpose seasoning
  • 1 tablespoon garlic, minced
  • ¼ cup green pepper, chopped
  • 2 cubes no-sodium beef bouillon
  • 1 teaspoon salt substitute

Instructions
 

  • Sort beans and remove any shriveled peas, stones or debris. Rinse peas and pour into a large bowl. Fill with enough water to cover peas. Let soak overnight.
  • Drain water and transfer peas to large pot. Add water, turkey ham, onions, pepper, all-purpose seasoning, garlic, green pepper, beef bouillon, and salt substitute.
  • Simmer peas on low heat until tender, about 45 minutes.
