Ingredients

potatoes,
chopped

tablespoons
olive oil
1
cup
ham,
cubed
½
onion,
chopped
¼
cup
herbs,
chopped
2
cups
spinach,
chopped
8-12
eggs,
beaten
1
cup
goat cheese
Instructions
Preheat oven to broil.
Cook potatoes until fork tender.
In cast iron skillet, Brown ham in olive oil.
Remove ham from skillet and sauté onion. add chopped herbs.
Add potatoes and cook until browned.
Add greens and stir until cooked.
Remove skillet from heat. add eggs.
add ham, goat cheese, salt and pepper.
Broil for 5-10 minutes and watch carefully for eggs to get puffy.
