Farm Frittata

A hearty open-faced omelet with savory ham, potatoes, spinach, herbs, and goat cheese.

Ingredients
  

  • 2 cups potatoes, chopped
  • 2 tablespoons olive oil
  • 1 cup ham, cubed
  • ½ onion, chopped
  • ¼ cup herbs, chopped
  • 2 cups spinach, chopped
  • 8-12 eggs, beaten
  • 1 cup goat cheese

Instructions
 

  • Preheat oven to broil.
  • Cook potatoes until fork tender.
  • In cast iron skillet, Brown ham in olive oil.
  • Remove ham from skillet and sauté onion. add chopped herbs.
  • Add potatoes and cook until browned.
  • Add greens and stir until cooked.
  • Remove skillet from heat. add eggs.
  • add ham, goat cheese, salt and pepper.
  • Broil for 5-10 minutes and watch carefully for eggs to get puffy.
