Ingredients
  

  • 1 package white chicken chili seasoning mix
  • 1 tablespoon canola oil or olive oil
  • 1 pound ground chicken
  • 1 cup water
  • One (15.5-ounce) can white beans (e.g., cannellini, great northern, or navy)
  • One (14.5-ounce) can chicken broth
  • One (15.5-ounce) can white kidney beans
  • One (14.5-ounce) can diced tomatoes
  • 1 tablespoon garlic, crushed
  • Toppings (e.g., cheese, sour cream, green onions, cilantro), optional

Instructions
 

  • Heat oil in a medium-sized pot on medium-high heat. Add chicken and cook until no longer pink, about 5 minutes.
  • Stir in water, broth, seasoning mix, garlic, beans, and tomatoes. Bring to a boil.
  • Reduce heat to medium low, cover, and simmer for 10-15 minutes.
  • Serve with toppings, if using.
