Veggie Tortilla Roll-ups

Hearty whole-wheat wraps with fresh spinach, tomato, bell pepper, cucumber, and tangy cream cheese.

Ingredients
  

  • Four (7-inch) whole-wheat tortillas
  • ½ cup nonfat cream cheese
  • 2 cups fresh spinach, chopped
  • 1 cup tomato, chopped
  • ½ cup bell pepper, chopped
  • ½ cup cucumber, chopped
  • ¼ cup canned green chiles
  • ¼ cup sliced ripe olives, drained

Instructions
 

  • Spread 2 tablespoons of cream on each tortilla.
  • Top each tortilla with equal amounts of spinach, tomato, bell pepper, cucumber, chiles, and olives.
  • Tightly roll up each tortilla to enclose filling. Slice each roll-up in half.
  • Serve.
