Tuna and White Bean Sandwich

Creamy tuna and cannellini bean salad in a garlic-mayonnaise dressing with fresh basil and cheese on toasted whole-grain bread.

Ingredients
  

  • One (6-ounce) can chunk light tuna, drained
  • Half (15-ounce) can cannellini beans, rinsed, drained and lightly mashed
  • 3 tablespoons onion, finely chopped
  • 2 tablespoons light mayonnaise
  • 1 clove garlic, minced
  • 8 slices whole-wheat bread, toasted
  • 2 medium tomatoes thinly sliced
  • 1 cup lightly packed fresh basil leaves
  • 2 ounces mozzarella, Havarti, or provolone cheese, thinly sliced

Instructions
 

  • In a medium bowl, add tuna, mashed cannellini beans, onion, mayonnaise, and garlic. Mix gently.
  • Spread half of the toasted bread slices with the tuna mixture.
  • Top tuna mixture with tomato slices, basil leaves and cheese.
  • Top with remaining bread slices.
