Ingredients
- 1 slice whole wheat toast
- ¼ cup cottage cheese
Fruit Topped Toast
- ⅓ cup blueberries or other sliced fruit.
Veggie Topped Toast
- ⅓ cup cucumber slices or 4-5 cherry tomatoes, sliced
Instructions
- Toast the bread.
- Spread cottage cheese evenly across toast.
- Arrange fruit or veggies on top. Serve.
Notes
Fruit Topped Toast
- You can use canned fruit. Choose fruit canned in 100% juice where possible. Just drain it first.
- Use Greek yogurt, 2 tablespoons of nut butter, or 1 tablespoon of cream cheese in place of the cottage cheese.
- Try it with sliced apples or pears and a sprinkle of cinnamon.
Veggie Topped Toast
- Use Greek yogurt in place of the cottage cheese.
- Try a drizzle of balsamic vinegar over the top.
- Add other fresh or cooked veggies.
