Topped Toast

Toast topped with cottage cheese and fresh fruit or veggies for a quick and easy snack.

Ingredients
  

  • 1 slice whole wheat toast
  • ¼ cup cottage cheese

Fruit Topped Toast

  • cup blueberries or other sliced fruit.

Veggie Topped Toast

  • cup cucumber slices or 4-5 cherry tomatoes, sliced

Instructions
 

  • Toast the bread.
  • Spread cottage cheese evenly across toast. 
  • Arrange fruit or veggies on top. Serve. 

Notes

Fruit Topped Toast

  • You can use canned fruit. Choose fruit canned in 100% juice where possible. Just drain it first.  
  • Use Greek yogurt, 2 tablespoons of nut butter, or 1 tablespoon of cream cheese in place of the cottage cheese. 
  • Try it with sliced apples or pears and a sprinkle of cinnamon. 

Veggie Topped Toast

  • Use Greek yogurt in place of the cottage cheese.
  • Try a drizzle of balsamic vinegar over the top. 
  • Add other fresh or cooked veggies.
