Veggie Topped Toast

Instructions
Toast the bread.
Spread cottage cheese evenly across toast.
Arrange fruit or veggies on top. Serve.
Notes
Fruit Topped Toast
You can use canned fruit. Choose fruit canned in 100% juice where possible. Just drain it first.
Use Greek yogurt, 2 tablespoons of nut butter, or 1 tablespoon of cream cheese in place of the cottage cheese.
Try it with sliced apples or pears and a sprinkle of cinnamon.
Veggie Topped Toast
Use Greek yogurt in place of the cottage cheese.
Try a drizzle of balsamic vinegar over the top.
