Stir-Fried Cabbage

Purple cabbage and garlic stir-fried in an Asian-inspired sauce.

Ingredients
  

  • 1 tablespoon canola oil
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 head purple or green cabbage, sliced into strips
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice wine vinegar, or apple cider vinegar
  • Salt, to taste

Instructions
 

  • Heat oil in a large skillet over medium heat.
  • Add sliced onions and cook until tender.
  • Add garlic and cook for an additional minute.
  • Stir in cabbage and cook until it is just starting to soften.
  • Add soy sauce and vinegar and cook until cabbage has just softened.
  • Remove from heat and salt, if desired. Serve.

Change it Up
Try using red cabbage or both red and green cabbage.
