Tender marinated chicken basted with a sweet and tangy barbecue sauce. |
Ingredients
- ½ cup ketchup
- ¼ cup apple cider or red wine vinegar
- 3 tablespoons brown sugar, firmly packed
- 2 cloves garlic, minced
- 1 tablespoon dry mustard
- 1 teaspoon Worcestershire sauce
- ½ teaspoon cayenne pepper, or hot sauce
- ¼ cup onion, finely chopped
- 1 ½ pounds chicken, skinless (2 split breasts, 4 drumsticks)
Instructions
- Combine all ingredients, except chicken, in a saucepan.
- Bring contents of saucepan to a boil, then reduce to low and simmer for 15 minutes, until sauce is thickened and flavors are developed.
- On a large plate or platter, brush chicken with half of the sauce. Cover and marinate in the refrigerator for 1 hour.
- Transfer chicken to a baking sheet lined with aluminum foil, place in oven and broil for 10 minutes on each side. Reduce oven to 350 F.
- Remove chicken from oven and brush with remaining sauce. Cover with aluminum foil and continue baking for 30 minutes or until juices run clear.
