Classic mashed potatoes made with skin-on red potatoes and fresh herbs. |
Ingredients
- 2 pounds red potatoes, scrubbed and cut into small wedges
- ¼ cup fresh parsley, minced
- 2 teaspoons olive oil
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Place potatoes in a large pot and cover with water. Bring to a boil.
- Reduce heat to medium and cook uncovered for 15-20 minutes, or until tender.
- Drain and place potatoes in a bowl.
- Mash the potatoes.
- Stir in parsley, oil, salt, and pepper. Serve hot.
