Ingredients
- 3 medium turnips, peeled and grated
- 3 medium carrots, peeled and grated
- ½ cup fresh parsley, chopped
- ½ lemon, juiced
- 2 tablespoons olive oil
- ¼ teaspoon salt
- ½ cup sunflower or pumpkin seeds, optional
- ½ cup walnuts, chopped
Instructions
- Add turnips, carrots, and parsley to a large bowl.
- Add lemon juice and olive oil. Mix gently until salad is coated.
- Season with salt and top with seeds or walnuts, if using. Serve.
