Raw Turnip Salad

A refreshing salad featuring root vegetables and herbs in a lemony vinaigrette.

Ingredients
  

  • 3 medium turnips, peeled and grated
  • 3 medium carrots, peeled and grated
  • ½ cup fresh parsley, chopped
  • ½ lemon, juiced
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ½ cup sunflower or pumpkin seeds, optional
  • ½ cup walnuts, chopped

Instructions
 

  • Add turnips, carrots, and parsley to a large bowl.
  • Add lemon juice and olive oil. Mix gently until salad is coated.
  • Season with salt and top with seeds or walnuts, if using. Serve.

Notes

Change it Up 
  • Add salad to a wrap or sandwich. 
  • Add chopped cooked chicken for additional protein.
