Potato Salad

Ingredients
  

  • 4 cups potatoes (about 5), peeled and cut into 1-inch cubes
  • ¼ cup onion, chopped
  • ½ cup celery, chopped
  • cup green pepper, chopped
  • 2 hard boiled eggs, chopped
  • 1 tablespoon fresh parsley, or 1 teaspoon dried
  • 1 teaspoon salt substitute
  • 1 teaspoon mustard
  • 1 teaspoon sodium-free all-purpose seasoning
  • ½ teaspoon garlic, minced
  • ¾ cup mayonnaise
  • ¼ cup sweet relish

Instructions
 

  • Place potatoes in a large pot and add enough water to cover potatoes by 2 inches.
  • Bring water to a boil, then reduce to medium low and simmer until potatoes are tender but firm, about 8-10 minutes. Drain and allow potatoes time to cool.
  • Add onions, celery, green pepper, eggs and parsley in a large bowl. Mix gently.
  • Add potatoes, salt substitute, mustard, sodium-free seasoning, garlic, mayonnaise, and relish. Mix gently until all ingredients are well coated.
  • Chill for 1 hour before serving.
