Ingredients
- 4 cups potatoes (about 5), peeled and cut into 1-inch cubes
- ¼ cup onion, chopped
- ½ cup celery, chopped
- ⅓ cup green pepper, chopped
- 2 hard boiled eggs, chopped
- 1 tablespoon fresh parsley, or 1 teaspoon dried
- 1 teaspoon salt substitute
- 1 teaspoon mustard
- 1 teaspoon sodium-free all-purpose seasoning
- ½ teaspoon garlic, minced
- ¾ cup mayonnaise
- ¼ cup sweet relish
Instructions
- Place potatoes in a large pot and add enough water to cover potatoes by 2 inches.
- Bring water to a boil, then reduce to medium low and simmer until potatoes are tender but firm, about 8-10 minutes. Drain and allow potatoes time to cool.
- Add onions, celery, green pepper, eggs and parsley in a large bowl. Mix gently.
- Add potatoes, salt substitute, mustard, sodium-free seasoning, garlic, mayonnaise, and relish. Mix gently until all ingredients are well coated.
- Chill for 1 hour before serving.
