Ingredients
  

  • 2 tablespoons light mayonnaise
  • 2 tablespoons low-fat sour cream
  • 1 teaspoon lemon juice
  • 2 pears, cored and diced
  • ¼ cup celery, diced
  • 1 cup seedless grapes, halved lengthwise
  • 1 cup cooked chicken, chopped or shredded
  • 2 tablespoons toasted walnuts, finely chopped (optional)
  • 3 large whole-wheat or whole-grain pocket style pita bread, halved
  • Leaf lettuce, mixed greens, or baby spinach
  • Salt and pepper to taste

Instructions
 

  • Whisk mayonnaise, sour cream, and lemon juice in a large bowl.
  • Add pears, celery, grapes, chicken, and walnuts, if using. Mix gently to combine.
  • Line the sides of each pita with leaf lettuce, mixed greens, or baby spinach.
  • Fill each pita with pear salad, distribute evenly until all are filled.
  • Season with salt and pepper to taste and serve.

Notes

Change it Up
  • Add chopped red apple, dried cranberries or golden raisins.
  • Garnish with fresh chopped herbs like dill or parsley.
  • Skip the pita and serve on a bed of lettuce.
