Maple Lemon Carrots

Carrots lightly glazed in a sweet maple and citrus butter sauce.

Ingredients
  

  • 1 bag baby carrots (or 2 cups carrots, sliced), or one (15.5-ounce) can carrots, drained and rinsed
  • 2 teaspoons lemon juice
  • 1 ½ tablespoons light butter
  • 2 teaspoons maple syrup
  • ¼ teaspoon salt

Instructions
 

  • Place carrots and 2 tablespoons of water in a microwave-safe dish. Cover and cook on high for 3 to 6 minutes, or until tender. Drain. If using canned carrots, cook until heated through, about 1 to 2 minutes.
  • Add butter, lemon juice, maple syrup, and salt. Stir until well coated and butter is melted.

Notes

Prep Tip
Cut carrots cook quicker than baby carrots. Whole baby carrots will cook in 4 to 6 minutes while cut carrots take 2 to 4 minutes. Canned carrots will cook in 1 to 2 minutes.
Change it Up
Use 1 tablespoon brown sugar instead of maple syrup.
