Macaroni and Cheese

Ingredients
  

  • 6 cups water
  • 1 teaspoon salt substitute
  • 2 cups elbow macaroni
  • 1 cup light cheddar cheese, shredded
  • 1 cup light processed cheese food, cubed
  • 3 tablespoons light margarine
  • ½ cup egg substitute
  • 4 cups skim milk
  • 1 teaspoon sodium-free all-purpose seasoning
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • Nonstick cooking spray

Instructions
 

  • Preheat oven to 350 F. Lightly coat a baking dish with nonstick cooking spray.
  • Add water and salt substitute to a large pot and bring to a rapid boil.
  • Gradually add elbow macaroni. Return to boil, stirring occasionally.
  • Continue boiling macaroni until tender, about 6 minutes. Drain and return to pot.
  • Add remaining ingredients to cooked macaroni, stirring gently until well blended.
  • Pour macaroni and cheese into a baking dish and bake for 30-40 minutes, until golden brown and bubbly.
