Kale and Parmesan Pasta

Ingredients

Makes 4 servings. Check items off as you go.
  • 2 large bunches kale
  • ½ pound (8-ounce box) whole-wheat pasta
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 6 cloves garlic chopped (2-3 tablespoons jarred minced garlic or 1 teaspoon garlic powder)
  • salt and pepper to taste
  • ½ cup grated Parmesan cheese
  • pinch red pepper flakes (optional)

Directions

  1. Rinse and drain kale. Remove and discard stems.
  2. Cut kale into thin strips.
  3. Bring a large pot of water to a boil. Add pasta to the boiling water and cook according to the package directions. Drain pasta in a colander saving a quarter cup of the cooking liquid..
  4. While pasta is cooking, add butter, olive oil, garlic or garlic powder, and red pepper flakes to a large skillet. Cook over medium heat for 2–3 minutes or until the garlic is soft and fragrant.
  5. Add kale and continue to sauté until the kale wilts and turns a deep green color (about 5–7 minutes). Turn heat off.
  6. Add drained pasta and 2–4 tablespoons of reserved cooking liquid to the pot with the cooked kale. Toss the pasta and kale together.
  7. Season with salt and pepper.
  8. Add the grated parmesan cheese and toss to coat.
  9. Serve hot.
